Basmati Bliss: Aromatic Rice Pilaf

Ingredients:

  • 1 cup Basmati rice
  • 2 cups vegetable or chicken broth
  • 2 tablespoons butter
  • 1/2 cup diced onions
  • 1/2 cup mixed vegetables (peas, carrots, bell peppers)
  • 1/4 cup chopped nuts (almonds, cashews)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the Basmati rice thoroughly and set it aside.
  2. In a large skillet, melt the butter over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the diced onions and sauté until they turn translucent.
  4. Stir in the mixed vegetables and cook for a few minutes.
  5. Add the rice and toast it for a couple of minutes until it's lightly golden.
  6. Pour in the broth, add the ground cumin, ground coriander, and season with salt and pepper.
  7. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit for a few minutes. Fluff the rice with a fork and garnish with chopped nuts and fresh cilantro.
